More than a meal
At Huso Lodge & Farm a meal is always more than what is on the plate. It is a celebration and a tribute — to the landscape that gave us the ingredients, to the seasons that shape them, and to the simple pleasure of gathering around a long table.
What we grow here is the starting point for everything we celebrate at Huso — weddings, company gatherings and family occasions. And the taste of Huso travels on with you: through our catering, a chef at your cottage, and fresh ingredients from the Farm Shop.

It all begins in the soil
We use no synthetic sprays, and we do not plough. Instead we feed the life below the surface, with compost and manure from the farms around us. That is why our vegetables have a flavour and a bite you will not find on a supermarket shelf. We harvest when they are at their best and keep them the same day: flash-frozen, fermented, or stored for the winter in the root cellar.
The meat comes from farms in the valley, where the care given to the animals mirrors the care we give the soil.
That is how summer reaches the table in the middle of winter. Together, the ingredients tell the story of this valley and the seasons that shape it.
The journey to your plate
Our job
Let us do the hard work.
You enjoy!
Seed & transplant
We start our seeds indoors in January and transplant in May. Compost from our kitchen and aged fermented manure from our neighbour farms keep our soil microbes fed and happy year-round.
Nourish & grow
With just summer sun, fresh mountain water, microbially rich soil and daily attention, our plants feast and flourish. No synthetic chemicals nor large industrial machinery are used.
Harvest, hunt & catch
Every vegetable and herb is hand-harvested with care by our farm team—and often our chefs. We catch trout from local mountain lakes and butcher moose, deer and more from the surrounding wilderness. Anything we can’t source ourselves, we rely on trusted local farmers for.
Preserve
Our chefs immediately preserve freshly harvested vegetables and locally hunted and sourced meat, crafting masterful ingredients for winter meals that capture peak flavour and nutrient density.
Prepare
Using our preserved ingredients, our chef brings your farm-to-table meal to life, carrying on the timeless ways and flavours of the old days.
Feast
Indulge in the rich flavours of freshly preserved, farm-to-table meals, enjoyed in the heart of winter.
Four ways to taste
Whether you want the food ready at the cottage, the chef at your door, the whole party at Huso — or simply the ingredients to take home: it starts in the same fields.

Catering
Our chef cooks, and we bring it up to the cottage. The dishes follow the seasons and the landscape around us: a warm, creamy mountain trout soup. A generous stew of game and vegetables from the field. What we grow and gather ourselves is what goes in the pot. It arrives ready for the table — eat straight away, or warm it gently when you come in after a day outdoors.
Private chef
For a longer evening, our chef comes to the cottage and cooks three courses — for you alone. It might begin with cured meats from our own kitchen, cheese from the neighbourhood and pickled vegetables from the field. Then a 60-day dry-aged entrecôte, grilled as it should be, with a purée of the season’s root vegetables, sautéed mushrooms and roast potatoes. And to finish, panna cotta with wild blueberries steeped in anise hyssop. No hurry. This is an evening for staying at the table.
Host a dinner at Huso
Gather friends, family or colleagues for an evening in one of our event rooms. A birthday, an anniversary, a Christmas dinner — or an occasion only you know the meaning of. We take care of the menu, the food, the service and the shape of the evening. You only have to enjoy it.
Weddings, retreats and gatherings
Huso is a place to arrive, settle in and stay a while. We host weddings and company gatherings that run two to three days, where the meals and the gatherings unfold at their own pace. Guests stay on the farm, the rooms are our own, and the food comes from the landscape around us. That makes an event at Huso something you are inside of — not something you pass through.
Farm shop
Take Huso home with you. Pre-order meat from the farms around us and chosen goods from the valley, and make the feast yourself — whether you are cooking in the cottage tonight or stocking up for the days ahead. The shop is open by arrangement.
